Homemade Granola

This granola is easy to make and so good. You can add your favorite dried fruits, nuts, and add ins (like chocolate chips). Served over yogurt or with your favorite milk it makes a quick and easy healthy breakfast.

Ingredients

  • 4 cups Old Fashioned Oats (Rolled Oats)
  • 1 cup nuts, chopped or sliced
  • 1/2 cup Pepitas
  • 2/3 cup Coconut Oil , melted
  • 1/2 cup Honey or maple syrup
  • ½ tsp vanilla
  • 1 cup Dried Cherries or any other dried fruit
  • 3/4 cup Unsweetened Flaked Coconut
  • 1/2 teaspoon Fine Sea Salt

Instructions

Preheat oven to 350 degrees and line a ½ baking sheet with parchment paper. Set aside.  While the oven is preheating, combine Old Fashioned Oats, nuts of choice, pepitas and salt to a large bowl and stir to combine.  In the same bowl, add in coconut oil, honey or maple syrup and vanilla extract and stir until everything is evenly coated.  Pour the granola onto the prepared cookie sheet and lightly press into a thin even layer. Place on the center rack of the oven and cook for 10 minutes.   Stir after 10 min and add coconut.  Cook additional 10 mins or until lightly browned.  Cool completely then add dried fruits of choice.  Store in airtight container.
