Pickled Eggs

This is an easy way to use up extra eggs and add an easy protein to a snack with cheese and crackers or on a salad. Add the beets for added iron and flavor.

  • 1 dozen eggs, hard boiled and peeled
  • 1 cup water
  • 3/4 cup sugar
  • 1 cup apple cider vinegar
  • 16oz beets and juice

Heat all ingredients except eggs in a medium sized saucepan. Bring to a simmer and cook just until hot and sugar is dissolved. Place hard boiled eggs in a large glass jar. Pour hot beet mixture over hard boiled eggs and refrigerate for at least 2 days. The longer they soak the deeper their color and flavor becomes.

Enjoy!

About
Welcome to Becoming Homesteaders I'm Jenni Lynn. I am passionate about homegrown organic foods and becoming more self-sufficient on our little urban 1/4-acre plot of land. We have a goal of getting back to a simpler way of living, producing all our vegetables, and preserving all that we can. I am excited to see where this new mind set will take us.
