This is an easy way to use up extra eggs and add an easy protein to a snack with cheese and crackers or on a salad. Add the beets for added iron and flavor.
- 1 dozen eggs, hard boiled and peeled
- 1 cup water
- 3/4 cup sugar
- 1 cup apple cider vinegar
- 16oz beets and juice
Heat all ingredients except eggs in a medium sized saucepan. Bring to a simmer and cook just until hot and sugar is dissolved. Place hard boiled eggs in a large glass jar. Pour hot beet mixture over hard boiled eggs and refrigerate for at least 2 days. The longer they soak the deeper their color and flavor becomes.
