Old Fashioned Peanut Brittle

Here is an easy recipe for the holidays or really any time of year. We are making this treat to pass out on Christmas Eve to our family along with all our home canned foods that are some of their favorites. So thankful for time with family. Treasure the moments with yours this year and make some easy homemade peanut brittle with some loved ones to share.

Ingredients

  • 2 cups sugar
  • 1 cup white corn syrup
  • 1 cup water
  • 2 cups peanuts
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tbl soft butter

Directions

In a medium saucepan, add sugar, corn syrup, and water.  Bring this to 236 degrees and then add peanuts.  If your peanuts are not salted add a teaspoon of salt at this point.  Bring this mixture up to 295 degrees.  Remove from heat and add the butter and, then add baking soda working fast to combine.  Spread quickly onto a greased/buttered rimmed cookie sheet.  This hardens fast so work quickly.  Let harden and then break up into bite sized pieces.

*  You can substitute cashews for the peanuts and make cashew brittle.

Happy Holidays! Keep cooking.
